This is original, traditional mead from Australia’s oldest commercial Meadery.  Mark Maxwell remains true to the recipe and techniques pioneered by his father. Though the package may have evolved over the years, the quality and purity of the mead has not. A benchmark for others to follow, it has been awarded the ‘best pure varietal mead’ gold medal at the International Mead Festival Competition in the USA.

Maxwell Honey Mead is made by fermenting pure South Australian honey, using one of the oldest recipes to create a beverage brimming with uniquely rich flavours and aromas. It is bright with golden hues and has floral beeswax and nutty marmalade-like aromas. It is refreshingly light on palate, subtle apricot and honey characters fill the mouth. Predictably sweet but not cloying.

    TA, NPA, and MGO are not grading systems. They are measurements of specific markers in honey.

    A grading system implies a single, standardised quality scale. What exists in medicinal honey is instead a set of laboratory measurements, each capturing a different aspect of the honey’s composition or activity. Treating them as equivalent “grades” leads to widespread misunderstanding.

    Understanding the relationship between these measurements is essential for comparing honeys accurately.

    TA = hydrogen peroxide activity + non-peroxide activity. It captures everything. For honeys like Jarrah, which derive their antimicrobial power primarily from hydrogen peroxide, the TA value reflects the honey’s full medicinal potency. For Manuka honey, TA includes both its MGO-driven non-peroxide activity and any hydrogen peroxide activity present.

    UMF™ = a trademarked label for NPA in New Zealand Manuka honey. It is not a separate measurement system – it is NPA certified under a specific trademark. UMF™ ratings apply exclusively to New Zealand Manuka honey.

    NPA = non-peroxide activity only. It is the portion of TA that remains after hydrogen peroxide is removed by catalase. For Manuka honey, NPA is the dominant component. For Jarrah honey, NPA is typically negligible because its activity comes from hydrogen peroxide.

    MGO = the amount of methylglyoxal in the honey. It predicts NPA reliably but measures a chemical concentration, not antimicrobial performance directly.

Making wine from honey instead of grapes was first introduced to Australia by Mark Maxwell’s father, Ken (1915 – 2004) whose devotion to the ancient craft created the benchmark for modern mead-making around the world. After a decade or more of experimentation with different honey’s and yeasts the famous Maxwell Honey Mead was born. The Australian mead industry was born in 1966 with the release of the first commercial label. Today, Maxwell Mead is Australia’s favourite honey wine and the most successful range in the Southern Hemisphere.
